The pursuit of authentic yakisoba

At Sofuren, we believe that true “yakisoba” is made by thoroughly grilling the noodles.

Not simply stir-frying them, but carefully grilling them to create a crisp texture.

With that as our definition of yakisoba, we have pursued how far we can elevate its flavor using only simple ingredients.

That is our signature “Sofuren Yaki.”

Thanks to our customers, we have welcomed many guests for more than seventy years.

The journey to this point has not been without hardship.

However, rather than speaking about those struggles here, we would like to share the dedication and craftsmanship behind Sofuren.

What is Sofuren-yaki?

ABOUT

Sofuren-yaki

In 1957, in Hita City, a craftsman named Yasuchika Sumi created a dish by grilling noodles on an iron griddle. This was the birth of yakisoba.

Today, the word “yakisoba” is widely known, but at the time, it was an innovative dish unlike anything else.

That was the beginning of “Sofuren Yaki.”

The carefully selected ingredients, produced together at our headquarters factory, are filled with our commitment to quality.

Fragrant grilled noodles, crisp bean sprouts, green onions with a refreshing sweetness, and rich, flavorful Waton Mochibuta pork.

These ingredients are grilled all at once with the secret sauce created by our founder, Yasuchika, through countless trials and refinements.

**At Sofuren, the sauce used for yakisoba is simply called "Tare."**

This is Sofuren Yaki.

The final touch of Sofuren Yaki is entrusted to our grilling craftsmen.

Every day, they grill each ingredient on a high-temperature iron griddle, bringing out its full potential.

This grilling technique has remained unchanged and continues to be passed down to Sofuren’s craftsmen today.

Through our headquarters-certified Grilling Craftsman Badge System, trust is given to those who have completed rigorous training.

Carrying that trust with pride, each craftsman works with responsibility and dedication every day.

Allergens include wheat, soybeans, pork, and apple.
